Who We Are

Swells bakery is a San Diego coastal micro bakery dedicated to crafting heritage grain sourdough bread and treats. Founded in 2022 by Pamela and Erik, the bakery specializes in bread that is non-GMO, stone-milled, and free from bleaching or bromate. With a passion for tradition and quality, the bakery uses time-honored techniques to create nourishing and flavorful baked goods.

Our Bread

Our bread is made with organic flour from Central Milling. We use a combination of flours include California stone-milled flour, which helps preserve the natural nutrients, oils, and flavors of the grain. This approach creates bread with a distinctive taste and texture that reflects the quality of the ingredients. Using organic flour also means our bread is free from additives like bleaching or bromates. It’s a simple, thoughtful process that emphasizes wholesome ingredients and traditional methods, resulting in bread that’s both flavorful and rooted in sustainability.
